Yes — the Apex X801 is much more promising for your particular problem than the Drew Force or New Balance 928v3, but there is one important catch regarding your 6E width. But here's my concern for you you wear 15 6E in the Drew Force. The current X801 is available in men's size 15, but Apex currently lists its widest X801 as X-Wide (4E) — not 6E. So I wouldn't tell you that a 15 X-Wide is definitely going to fit. A 4E could still be too narrow for you. However, because your main complaint with the Drew and New Balance is your big toe hitting the roof, the X801's high toe box + removable depth is a very good feature combination for you. Winter issue, There's another thing you should know: the X801 is not a fully solid leather shoe. Apex describes the upper as leather plus breathable open-air mesh, with a moisture-wicking mesh lining. So if your priority is keeping your feet warm in winter, I wouldn't consider the X801 an ideal winter shoe. It has leather, but it still has breathable mesh areas.
For your feet, I'd look for:
Men's 15
6E or wider
Extra-depth
High/vertical toe box
Leather or water-resistant upper rather than open mesh
Removable insole/depth so you can create more room above the big toe
And importantly, don't solve the toe problem by simply going longer. That can leave too much room behind your heel while the toe still contacts the upper.
